Sausage, Pepper, & Onion FFP (Family Foil Packet)

Ingredients:


-2 (13 oz) packs of smoked sausage (I used Butterball Turkey Smoked Sausage)
-1 (22 oz) bag of Alexia Oven Reds Potatoes
-1 (10 oz) bag of frozen pepper/onion blend
-2 teaspoons garlic pepper seasoning
-1 teaspoon Mrs. Dash (Original flavor)


Directions:



  1. Preheat oven to 425º.
  2. Slice sausage.
  3. Lay out several layers of foil (enough to wrap all ingredients in).
  4. Combine all ingredients except pepper/onion blend, Mrs. Dash, and garlic pepper seasoning and lay on foil.
  5. Add pepper/onion blend for the top layer and sprinkle with garlic pepper seasoning and Mrs. Dash. Toss gently.
  6. Seal ingredients in foil and slide packet onto cookie sheet.
  7. Bake at 425º for 45 minutes.

SALMON CROQUETTES

INGREDIENTS:


-2 CANS OF SALMON (DRAINED)
-1 MEDIUM DICED ONION
-1 TABLESPOON GARLIC PEPPER SEASONING
-1 EGG
-1/2 CUP ALL PURPOSE FLOUR
-1/4 CUP CORNMEAL

1. EITHER REMOVE BONES OR GO THROUGH SALMON, CRUSHING BONES AND MIXING/SQUISHING SALMON.

2. ADD REMAINING INGREDIENTS AND MIX WELL. MIXTURE SHOULD HOLD TOGETHER WHEN SQUEEZED AND RESEMBLE A DOUGH MIXTURE. IF MIXTURE DOESN'T HOLD TOGETHER THEN GRADUALLY ADD FLOUR UNTIL IT DOES.

3. FORM PATTIES (USE ABOUT 1/4 CUP SALMON MIXTURE PER PATTY) AND FRY ON MEDIUM HIGH HEAT FOR 3-4 MINUTES PER SIDE OR UNTIL GOLDEN BROWN.

DIRECTIONS:


***PREHEAT OVEN TO 350º***

-5 MEDIUM POTATOES (WASHED & SLICED 1/4 INCH THICK)
-1 MEDIUM SWEET OR YELLOW ONION (SLICED)
-1 CAN OF CREAM OF MUSHROOM SOUP
-2 TEASPOONS OF GARLIC PEPPER SEASONING
-SHREDDED CHEESE OF YOUR CHOOSING (I USED KRAFT TRIPLE CHEDDAR)


  1. PUT DOWN A LAYER OF POTATOES THEN SPRINKLE WITH 1 TEASPOON OF SEASONING.
  2. LAYER HALF OF YOUR ONION THEN HALF OF YOUR CHEESE THEN HALF OF YOUR CREAM OF MUSHROOM SOUP.
  3. REPEAT LAYERS THEN COVER WITH FOIL AND BAKE AT 350º FOR 1 HOUR AND 20 MINUTES OR UNTIL POTATOES ARE FORK TENDER.

Pimento Cheese Spread

Ingredients:


-4 oz jar pimentos
-1/2 of a medium sweet onion (diced)
-2 cups shredded cheddar cheese
-1 cup or 8 oz shredded Pepper Jack cheese
-8 oz softened cream cheese
-1/2 cup mayonnaise
-1/2 teaspoon Creole of Cajun seasoning


Directions:


Mix all ingredients until well combined and serve! Enjoy!

Yields about 4 cups.

Southern Style Breakfast "Enchiladas"

Ingredients


-3 cups of shredded cheese (set one cup aside for topping)
-2 rolls of mild sausage
-O’Brian hash browns (20 oz bag)
-10 eggs
-2 cans Rotel tomatoes (drained)
-12 regular sized tortillas
-6 cups of homemade sausage gravy OR 3 cans of sausage gravy
-If making gravy you’ll need:
-2 rolls of mild sausage (in addition to the 2 rolls for the filling)
-1 1/2 cup all purpose flour
-1/2 gallon of milk
-2 tablespoons salt
-1 tablespoon pepper

Directions



  1. ***If making sausage gravy start here. If using canned, skip to set 2.*** Cook sausage on medium high heat, crumbling as you cook. DO NOT DRAIN. Gradually stir flour into sausage & cook for 2 minutes while stirring. Add milk slowly while constantly stirring. Add salt and pepper. Keep cooking for 5 minutes until thickened.   2. Brown sausage, crumbling as it cooks. Drain sausage.
  3. Scramble eggs.
  4. Combine sausage, 2 cups of cheese, hash browns, scrambled eggs, & Rotel tomatoes. Stir until combined.

5. Pour 2 cups of gravy onto the bottom of the pan.


6. Dip each tortilla into gravy, fill with filling, roll enchilada, & place seam side down into pan.






7. Pour gravy over enchiladas and sprinkle cheese over gravy.




8. Bake, uncovered, at 350º for 30 minutes.

Eggnog Coffee Cake

Cake Ingredients:

Wet:

2 sticks of butter (softened)
2 cups of eggnog
1 tablespoon of vanilla extract
3 eggs

Dry:

2 1/2 cups of all purpose flour
4 teaspoons baking powder
1 teaspoon salt
2 teaspoons of nutmeg
1 1/2 cups granulated sugar


Glaze Ingredients:


2 cups powdered sugar
2 teaspoons nutmeg
2-3 tablespoons eggnog depending on desired thickness




Directions:


  1. Combine all liquid ingredients (butter, eggnog, vanilla extract, & eggs) and stir until well blended. Be sure to add the eggs last if using melted butter.
  2. Mix all dry ingredients (flour, baking powder, salt, nutmeg, and granulated sugar) until well mixed.
  3. Slowly incorporate the wet ingredients into the dry ingredients.


    4. Pour batter into greased cake pan and bake on 350 for 25-35 minutes (oven times may vary).


   5. Make glaze (combine powdered sugar and nutmeg and gradually thin out with eggnog until desired consistency   reached) and set aside.



   6. Remove cake from oven and cool for 30 minutes. Apply glaze and enjoy!

Sausage Pot Pie

Ingredients:


4- 13 oz packs skinless smoked sausage
2 packs brown gravy or 4 cups prepared gravy
2 boxes refrigerated pie crusts (4 crusts total)
1- 16 oz bag frozen peas and carrots
2 cups frozen seasoning blend (or 1 red bell pepper, 1 green bell pepper, & 1 white onion; chopped)
1 teaspoon Cajun seasoning
2 tablespoons onion powder
2 teaspoons garlic pepper seasoning
2 tablespoons vegetable oil
3 tablespoons Butter or butter flavored cooking spray

Directions:


***Preheat oven to 375 degrees.***

  1. Slice sausage into medallions.

        2. Saute seasoning blend or pepper/onion mixture with vegetable oil and cajun seasoning.

        3. Make gravy (if using powdered gravy).

        4. Add sausage, peas, carrots, onion powder, and garlic pepper seasoning to pepper/onion mixture and cook on     medium-lo heat for 10 minutes, stirring frequently.

      5. Add gravy to sausage mixture and simmer for 5 minutes.


  6. Pour mixture into a baking dish, cover with pie crust, spray with butter flavored cooking spray or brush with melted butter, & bake for 45 minutes.
